We are excited to partner with Executive Chef Sean Cutler and his culinary team at Chef’s Table to create a dinner experience that will blow your mind.
Literally.
We are working with them to create a decadent 4-course menu (plus amuse bouche and palate cleanser) where each course features 1 amazing brain food, showcased in multiple preparations.
Eating for brain and mental health doesn't have to be boring. And we are going to show you just how delicious it can be. As each course is being served, you will get schooled by Orsha Magyar of NeuroTrition on the exciting brain science behind the featured ingredient in that course, along with the wine and mocktail we are pairing it with. You will also have an opportunity to meet and listen to Chef Sean describe his brainy food philosophy and approach to cooking.

BRAIN FOOD MENU
This exceptional menu has been created using 100% brainy foods, all found in the bountiful season of Autumn. It also incorporates probiotic and prebiotic rich foods into each course, to help ensure some gut-brain love during this delicious meal. Selected wine and specially crafted mocktail pairings will also accompany each course.

Roasted fig with house made ricotta and pickled grape, chocolate balsamic glaze
KALE
Warm black kale salad with roasted sweet potato and Brussels sprouts, whipped goats cheese, hazelnut, sprouted black lentils, pickled cauliflower, confit garlic and apple cider vinaigrette
SALMON
Chinook salmon tartare with fermented fall salsa, kefir, puffed wild rice, and toasted sourdough
SEASONAL KOMBUCHA SORBET
This one’s a surprise we’re working hard on—at our last event in Summer we featured a seasonal Saskatoon berry Buch sorbet, so you can expect a beautiful Autumn fruit sorbet to cleanse your palate with

Miso bison pot au feu with butter poached turnip, wild mushrooms, celery root, and charred cabbage

Pear and beet cake, pomegranate molasses, chocolate soil, and ginger honey turmeric ice cream
